Baby Bok Choy Stir Fry


This is a very simple way to prepare baby bok choy. I don't always add sesame seeds or coconut amnios- fish sauce or soy sauce (not for Whole30 though) can be substituted. Often times other than the garlic and chilies I don't add anything. It seems like it would be bland but the bok choy has great flavor and we like it. This can be served as a side dish. We've had it with Curry Pork Chops, with broiled or baked fish, with steak, over rice or quinoa.

Vegetarian Red Curry

I love red curry, it's probably my favorite Thai curry. This is a Whole30 compliant dish, it could be used as a side with fat built in from the coconut milk. If not on a Whole30 round I like to add medium firm tofu to this. I usually pan fry the tofu first to get it crispy, then make the curry and stir it in after. This is an easy dish to make. If you're going to be pressed for time you can even prepare all the vegetables the day before. This can be made Vegan if you use a vegan curry paste and leave out the fish sauce, subbing for salt.
I have two store bought red curry paste brands that I have used. Both are Whole30 compliant, only one is vegan. That brand is Thai Kitchen brand. The other brand of paste I use is Mae Ploy brand. Which is very yummy but it has shrimp in it. I like both brands, the Mae Ploy does have more umami flavor to it.

She arrives in Pittsburgh to find work so she can send money back home to her family. Clara is mistaken for a girl who was experienced to come work as a lady's maid. Clara takes on the missing girls identity and takes on the job of lady's maid for Mrs. Carnegie, Andrew Carnegie's mother.

2017-2018 School Lunches 14-30

Squeee, I am so so far behind on lunch posts. I got a new phone. Not really by choice. My last one died. Blah. I don't like new things. I got into a pretty good habit of taking pictures on my phone and posting them on here from there. Problem is, I can't figure out how to do that on this new phone. So, I have been packing lunches and taking pictures, I just now have to transfer them onto my laptop (that is legit old) and post them from there. So  here we are, behind but here. Some of these lunches I only got a picture of one while the others were thrown into lunch bags. But whatever works.

2017-2018 School Lunches 1-13

School lunches have been really random this year, a little bit of this and that. Whatever anyone wants to pack etc. But here are some pictures, many are off of my very old phone that takes the worst pictures so I apologize for the quality.


The Thermos containers in the back have ravioli and red sauce in them.
The mason jars in front have carrots, cucumber, grapes, and plums.
The ravioli were frozen. I heated them in my Instant Pot on HP, 3 minutes. There was about a cup of water in the pot, the Ravioli were in a steamer basket.

Peasread: Unraveling

I had a very hard time reading this book. I just wanted so badly for it to be better than the first book. It wasn't. So much potential with a cool concept and story. Unique "good vs evil" story. We start off with El as Queen. You can read the summary below. The book is not a good standalone book, even with having already read the first book this was confusing at times. Flashbacks/memories, moving through stories of different characters. The book didn't flow well. Sometimes memories were confusing because it wasn't easy to tell that it was a memory.
